Slow-Cooker Pork Medallions

Slow-Cooker Pork Medallions is a delicious and easy-to-prepare dish that’s perfect for busy weeknights or when you want a comforting meal with minimal effort. The pork medallions become incredibly tender as they slowly cook in a savory sauce, absorbing all the rich flavors. This dish pairs beautifully with mashed potatoes, rice, or a simple side of vegetables, making it a versatile option for any dinner table. The best part? Your slow cooker does most of the work, allowing you to go about your day while it simmers to perfection.

Ingredients:

  • 1.5 pounds pork tenderloin, cut into 1-inch thick medallions
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup apple cider or apple juice
  • 2 tablespoons Dijon mustard
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Sear the Pork: Heat olive oil in a large skillet over medium-high heat. Add the pork medallions and sear on each side for 2-3 minutes until they are browned. Transfer the medallions to the slow cooker.
  2. Prepare the Sauce: In the same skillet, add the sliced onions and garlic. Sauté for about 3-4 minutes until the onions are softened. Stir in the chicken broth, apple cider, Dijon mustard, soy sauce, honey, thyme, pepper, and salt. Bring the mixture to a boil, then pour it over the pork medallions in the slow cooker.
  3. Cook: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the pork is tender and fully cooked.
  4. Thicken the Sauce: In a small bowl, mix the cornstarch and water until smooth. About 30 minutes before the cooking time is up, stir the cornstarch mixture into the slow cooker to thicken the sauce.
  5. Serve: Once the sauce has thickened, serve the pork medallions with the sauce drizzled on top. Garnish with chopped fresh parsley if desired.
