This Potato and Chorizo Casserole is a hearty and flavorful dish that combines the earthy richness of potatoes with the smoky spiciness of chorizo. Perfect for a family dinner or a potluck gathering, this casserole is easy to prepare and sure to satisfy. The tender potatoes absorb the flavors of the chorizo, while the cheese adds a creamy, melty finish. This dish is not only delicious but also versatile, as you can easily add your favorite vegetables or adjust the spiciness to suit your taste.
Ingredients:
- 1 lb (450g) chorizo sausage, casing removed and crumbled
- 4 large russet potatoes, peeled and thinly sliced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup milk or cream
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the oven: Preheat your oven to 375°F (190°C).
- Cook the chorizo: In a large skillet, heat the olive oil over medium heat. Add the crumbled chorizo and cook until browned, about 5-7 minutes. Remove the chorizo from the skillet and set aside, leaving some of the rendered fat in the pan.
- Sauté the vegetables: In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Prepare the sauce: In a small bowl, whisk together the sour cream, milk or cream, smoked paprika, and a pinch of salt and pepper.
- Assemble the casserole: In a greased 9×13-inch baking dish, layer half of the sliced potatoes, followed by half of the cooked chorizo and onion mixture. Pour half of the sour cream mixture over the top, then sprinkle with half of the shredded cheddar cheese. Repeat the layers with the remaining potatoes, chorizo, onion mixture, sour cream mixture, and cheese.
- Bake: Cover the casserole with foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
- Garnish and serve: Let the casserole cool for a few minutes before serving. Garnish with chopped parsley and enjoy!
This casserole pairs wonderfully with a fresh green salad or steamed vegetables. Enjoy the warm, comforting flavors of this dish on a chilly evening or any time you’re craving something satisfying and delicious.
