Rump Roast Recipe

Ingredients:

  • 3-4 lb rump roast
  • 2 tablespoons olive oil

  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 4 carrots, peeled and cut into large pieces
  • 3 large potatoes, peeled and cut into chunks
  • 1 onion, quartered
  • 2 bay leaves

Instructions:

  1. Prepare the roast: Preheat your oven to 325°F (165°C). In a small bowl, mix the olive oil, garlic, rosemary, thyme, salt, and pepper to form a paste. Rub the mixture all over the rump roast, making sure it’s evenly coated.
  2. Sear the roast: In a large, oven-safe pot or Dutch oven, heat a tablespoon of olive oil over medium-high heat. Sear the roast on all sides for 3-4 minutes per side, until it’s nicely browned. This step locks in the flavors and adds a beautiful crust.
  3. Add the liquids and vegetables: Once the roast is seared, add the beef broth and red wine (if using) to the pot. Arrange the carrots, potatoes, and onion around the roast, and add the bay leaves. Bring the liquid to a simmer.
