PRESSURE-COOKER PORK CHILI VERDE

Pressure-Cooker Pork Chili Verde is a bold and flavorful dish that combines tender chunks of pork with a zesty, vibrant green sauce made from tomatillos, green chilies, and fresh herbs. The pressure cooker ensures that the pork becomes melt-in-your-mouth tender in a fraction of the time, while the rich and tangy sauce develops deep, complex flavors. This comforting chili verde is perfect for weeknight dinners or entertaining, and it’s delicious served over rice, with warm tortillas, or topped with fresh cilantro and lime.

Ingredients:

  • 2 lbs pork shoulder, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 lb tomatillos, husked and quartered
  • 2 poblano peppers, diced
  • 1 jalapeño, diced (optional for heat)
  • 1 (4 oz) can diced green chilies
  • 1/2 cup chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp ground coriander
  • Salt and pepper to taste
  • Fresh cilantro and lime wedges for garnish

Instructions:

  1. Sear the pork: Set your pressure cooker to the sauté function and heat the olive oil. Add the pork cubes and sear on all sides until browned, about 5-6 minutes. Remove the pork and set aside.
  2. Sauté the vegetables: In the same pot, add the diced onion, garlic, and poblano peppers. Cook for 3-4 minutes until softened and fragrant.
  3. Add the tomatillos and seasonings: Stir in the tomatillos, diced green chilies, jalapeño (if using), cumin, oregano, coriander, salt, and pepper. Cook for another 2-3 minutes until the tomatillos begin to break down.
  4. Pressure cook: Return the seared pork to the pressure cooker. Pour in the chicken broth, stir to combine, and secure the lid. Set the pressure cooker to high pressure for 25 minutes.
  5. Release pressure and serve: Once the cooking time is complete, allow the pressure to release naturally for 10 minutes before carefully performing a quick release. Open the lid and stir the chili. Adjust seasoning if necessary.
  6. Serve: Ladle the pork chili verde into bowls, garnishing with fresh cilantro and a squeeze of lime. Serve with rice, tortillas, or tortilla chips.

This Pressure-Cooker Pork Chili Verde is a flavorful, tender, and zesty dish that’s ready in a fraction of the time, making it perfect for busy weeknight dinners or weekend gatherings!
