Lemony Turkey Rice Soup

Ingredients:

  • 4 cups cooked turkey, shredded or diced
  • 1 cup uncooked white or brown rice
  • 6 cups chicken or turkey broth
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Juice of 2 lemons
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, and cook for about 5-7 minutes until softened.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the rice, broth, thyme, and bay leaves. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the rice is tender.
  4. Stir in the cooked turkey and continue cooking for another 5-7 minutes until the turkey is heated through.
  5. Remove the bay leaves and stir in the lemon juice. Season with salt and pepper to taste.
