Chopped Salad Pizza

This Chopped Salad Pizza is a delightful fusion of two beloved dishes: a crisp, fresh salad and a cheesy, savory pizza. The crust is baked to a perfect golden brown, providing a sturdy base for the colorful, vibrant salad that tops it. The chopped salad features a mix of crunchy vegetables, creamy cheese, and a tangy vinaigrette, offering a refreshing contrast to the warm, melted cheese on the pizza. This dish is perfect for a light lunch or a fun dinner, combining the best of both worlds in each bite.

Ingredients:

  • For the pizza crust:
    • 1 pre-made pizza dough or your favorite homemade pizza dough recipe
    • 1 tablespoon olive oil
    • 1 cup mozzarella cheese, shredded
  • For the chopped salad:
    • 1 cup cherry tomatoes, halved
    • 1 cucumber, diced
    • 1 red bell pepper, diced
    • 1/4 red onion, finely chopped
    • 1/2 cup Kalamata olives, pitted and sliced
    • 1/4 cup feta cheese, crumbled
    • 1/4 cup fresh basil leaves, chopped
    • 1/4 cup fresh parsley, chopped
  • For the dressing:
    • 1/4 cup olive oil
    • 2 tablespoons red wine vinegar
    • 1 teaspoon Dijon mustard
    • 1 clove garlic, minced
    • Salt and pepper, to taste

Instructions:

  1. Preheat the oven: Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while it heats up.
  2. Prepare the crust: Roll out the pizza dough on a floured surface to your desired thickness. Transfer the dough to a parchment-lined baking sheet or a pizza peel if using a pizza stone. Brush the crust with olive oil and sprinkle the mozzarella cheese evenly over the top.
  3. Bake the pizza: Transfer the crust to the oven and bake for 10-12 minutes, or until the crust is golden and the cheese is melted and bubbly. Remove from the oven and let it cool slightly.
  4. Make the chopped salad: While the pizza bakes, prepare the chopped salad. In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, Kalamata olives, feta cheese, basil, and parsley.
  5. Prepare the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper. Pour the dressing over the chopped salad and toss to combine.
  6. Assemble the pizza: Once the pizza crust has cooled slightly, top it with the chopped salad, spreading it evenly over the entire pizza. Slice and serve immediately.

Enjoy your Chopped Salad Pizza as a unique and refreshing twist on the classic pizza experience!
