CASHEW CHICKEN

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1/2 cup unsalted roasted cashews
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch (optional, for thickening)
  • 2 tbsp vegetable oil
  • 2 green onions, chopped (optional, for garnish)
  • Cooked rice, for serving

Instructions:

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, honey, rice vinegar, and cornstarch (if using). Set aside.
  2. Cook the chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the cubed chicken and stir-fry until cooked through and golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Stir-fry the vegetables: In the same skillet, add the remaining tablespoon of oil. Sauté the garlic, ginger, onion, and bell peppers for 3-4 minutes until the vegetables are slightly tender but still crisp.
  4. Add the chicken and sauce: Return the cooked chicken to the skillet and pour in the prepared sauce. Stir everything together and cook for another 2-3 minutes, allowing the sauce to thicken and coat the chicken and vegetables.
  5. Add the cashews: Stir in the roasted cashews just before serving, ensuring they are evenly distributed throughout the dish.
