VEGETARIAN PAD THAI

Ingredients:

  • 2 cloves garlic, minced
  • 1 cup bean sprouts
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 3 green onions, chopped
  • 1/4 cup roasted peanuts, crushed
  • 2 tbsp tamarind paste
  • 3 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 tsp sriracha or chili garlic sauce (optional for heat)
  • Fresh cilantro and lime wedges for garnish

Instructions:

  1. Cook the noodles: Prepare the rice noodles according to the package instructions. Drain and set aside.
  2. Fry the tofu: In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 6-8 minutes. Remove from the skillet and set aside.
  3. Stir-fry the vegetables: In the same skillet, add the remaining tablespoon of oil. Sauté the garlic, carrots, bell pepper, and green onions for 3-4 minutes, until slightly softened.
  4. Make the sauce: In a small bowl, whisk together the tamarind paste, soy sauce, lime juice, brown sugar, and sriracha (if using). Pour the sauce into the skillet with the vegetables.
  5. Combine: Add the cooked noodles and tofu to the skillet. Toss everything together until the noodles are well coated in the sauce and heated through, about 2-3 minutes.
  6. Serve: Divide the Pad Thai onto plates and top with bean sprouts, crushed peanuts, fresh cilantro, and lime wedges for garnish.
