Pineapple Mango Pulled Pork

  • 3–4 lbs pork shoulder or pork butt
  • 1 tablespoon olive oil

  • 1 cup pineapple juice
  • 1/2 cup mango puree (fresh or store-bought)
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon red pepper flakes (optional for heat)
  • 1/2 cup fresh pineapple, diced
  • 1/2 cup fresh mango, diced
  • Soft buns or tortillas (for serving)
  • Fresh cilantro and lime wedges (for garnish)

Instructions:

  1. Rub the pork shoulder with salt, pepper, smoked paprika, and garlic powder.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the pork on all sides until browned, about 2-3 minutes per side. Remove from heat.
  3. In a slow cooker, combine pineapple juice, mango puree, brown sugar, apple cider vinegar, soy sauce, Worcestershire sauce, and red pepper flakes. Stir to mix well.
  4. Place the seared pork in the slow cooker and cover with the sauce. Cook on low for 8 hours or on high for 4-5 hours, until the pork is tender and easily shredded with a fork.
  5. Once the pork is done, remove it from the slow cooker and shred it using two forks. Return the shredded pork to the sauce and mix in the diced pineapple and mango.
  6. Serve the pulled pork on soft buns or tortillas, garnished with fresh cilantro and a squeeze of lime.
