KETO MEATBALLS AND SAUCE

Ingredients:

For the meatballs:

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/3 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the sauce:

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions:

  1. Prepare the meatballs: In a large bowl, combine the ground beef, ground pork, almond flour, Parmesan cheese, egg, minced garlic, parsley, oregano, salt, and pepper. Mix until well combined. Form the mixture into 1-inch meatballs and set aside.
  2. Sear the meatballs: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the meatballs in batches, searing them on all sides until browned, about 6-8 minutes. Remove the meatballs from the skillet and set aside.
  3. Make the sauce: In the same skillet, add the chopped onion and cook for 4-5 minutes, until softened. Add the minced garlic and cook for another minute. Stir in the crushed tomatoes, oregano, basil, salt, and pepper. Bring the sauce to a simmer.
