MOO SHU PORK STIR-FRY

Moo Shu Pork Stir-Fry is a flavorful, quick-cooking dish that brings together tender strips of pork with a vibrant mix of cabbage, mushrooms, and aromatics like garlic and ginger. This Chinese-inspired dish is known for its savory, slightly sweet hoisin sauce, which coats the stir-fried ingredients in a delicious glaze. Traditionally served with thin pancakes or over rice, Moo Shu Pork is a perfect weeknight dinner option that’s easy to make yet packed with satisfying flavors and textures.

Ingredients:

  • 1 lb pork tenderloin, thinly sliced into strips
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil, divided
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1/2 cup shiitake mushrooms, sliced
  • 1 small head of green cabbage, shredded
  • 2 green onions, chopped
  • 1/4 cup hoisin sauce
  • 2 tbsp soy sauce (for sauce)
  • 1 tbsp sesame oil
  • 8 small flour tortillas or thin pancakes (for serving)
  • Rice, optional for serving

Instructions:

  1. Marinate the pork: In a bowl, mix the sliced pork with 2 tablespoons of soy sauce, rice vinegar, and cornstarch. Let it marinate for 15-20 minutes while you prepare the vegetables.
  2. Stir-fry the pork: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry for 4-5 minutes until browned and cooked through. Remove the pork from the pan and set aside.
  3. Sauté the vegetables: In the same skillet, heat the remaining tablespoon of vegetable oil. Add the garlic, ginger, and sliced shiitake mushrooms. Stir-fry for 2 minutes until fragrant. Then, add the shredded cabbage and cook for another 3-4 minutes until the cabbage is slightly wilted but still crisp.
  4. Add the sauce: Stir in the hoisin sauce, 2 tablespoons of soy sauce, and sesame oil, mixing everything well. Return the cooked pork to the skillet and toss to coat the pork and vegetables in the sauce.
  5. Serve: Serve the Moo Shu Pork in warm tortillas or thin pancakes. Alternatively, serve it over rice. Garnish with chopped green onions and extra hoisin sauce if desired.
