Ingredients:

  • 1 acorn squash, halved, seeded, and sliced into thin wedges
  • 1 tbsp olive oil
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • Salt and pepper to taste
  • 1 medium onion, thinly sliced
  • 1 tbsp butter
  • 1 cup shredded Gruyère or goat cheese (optional)
  • 1 pre-made pie crust (or homemade)
  • 1 egg, beaten (for egg wash)
  • Fresh parsley or thyme for garnish (optional)

Instructions:

  1. Preheat the oven: Set your oven to 400°F (200°C).
  2. Roast the acorn squash: Toss the acorn squash wedges with olive oil, thyme, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized. Set aside to cool slightly.
  3. Caramelize the onions: In a skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, for 15-20 minutes until golden and caramelized. Season with a pinch of salt and pepper.
  4. Assemble the galette: Roll out the pie crust on a lightly floured surface and transfer it to a parchment-lined baking sheet. Spread the caramelized onions over the center of the crust, leaving a 2-inch border around the edges. Layer the roasted acorn squash slices on top of the onions, then sprinkle with Gruyère or goat cheese if using.
  5. Fold the edges: Gently fold the edges of the crust over the filling, pleating as you go. Brush the crust with the beaten egg to give it a golden finish.
  6. Bake: Bake the galette for 25-30 minutes, or until the crust is golden brown and crisp.
  7. Serve: Let the galette cool for a few minutes, then garnish with fresh parsley or thyme before slicing and serving.

This Acorn Squash Galette is a delicious blend of savory and sweet, perfect for any fall or holiday meal!
