Ingredients:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups beef or chicken broth
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup tomato sauce
  • 8 oz (about 2 cups) uncooked pasta (such as rotini or penne)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Sliced green onions (for garnish)

Instructions:

  1. Sauté the Beef and Onions:
    • Set the Instant Pot to the sauté function. Add the ground beef and chopped onion to the pot, cooking until the beef is browned and the onion is softened, about 5 minutes.
    • Add the minced garlic and cook for another minute until fragrant. Drain any excess fat if necessary.
  2. Add the Seasoning and Liquids:
    • Stir in the taco seasoning, making sure the beef is evenly coated.
    • Pour in the beef or chicken broth, diced tomatoes with green chilies (including the liquid), and tomato sauce. Stir well to combine.
  3. Add the Pasta:
    • Add the uncooked pasta to the pot, pressing it down gently into the liquid. Ensure the pasta is mostly submerged but do not stir.
  4. Cook Under Pressure:
    • Secure the lid on the Instant Pot and set the valve to the sealing position.
    • Cook on high pressure for 4 minutes. Once the cooking time is complete, perform a quick release by carefully turning the valve to the venting position.
  5. Finish the Dish:
    • Once the pressure has released and the lid can be opened, stir the pasta mixture well.
    • Stir in the shredded cheddar cheese and sour cream until the cheese is melted and the pasta is creamy.
    • Taste and season with salt and pepper if needed.
  6. Serve:
    • Spoon the taco pasta into bowls and garnish with fresh cilantro and sliced green onions.

Enjoy your Instant Pot Taco Pasta, a quick, cheesy, and flavorful meal that brings together the best of tacos and pasta in one dish!
