Ulu (Breadfruit) Pancakes

Ulu (Breadfruit) Pancakes are a delicious and unique twist on traditional pancakes, using the starchy and naturally sweet breadfruit as the base. Ulu, a staple in Pacific Island cuisine, adds a creamy texture and subtle nutty flavor to these pancakes, making them both nutritious and satisfying. These pancakes are light, fluffy, and perfect for breakfast or brunch. Paired with fresh fruit, coconut syrup, or a drizzle of honey, Ulu Pancakes offer a tropical flair to your morning routine, giving you a taste of island life in every bite.

Ingredients:

  • 1 cup cooked and mashed ulu (breadfruit)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 1 egg
  • 1 cup coconut milk (or regular milk)
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • Coconut syrup, honey, or fresh fruit (for serving)

Instructions:

  1. Prepare the Ulu:
    • If using fresh ulu, boil or steam the breadfruit until soft, then mash it until smooth. Let it cool slightly before using.
  2. Mix the Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  3. Combine Wet Ingredients:
    • In a separate bowl, mix the mashed ulu, egg, coconut milk, melted butter, and vanilla extract until smooth.
  4. Make the Batter:
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. The batter should be thick but pourable. If it’s too thick, add a little more coconut milk to reach the desired consistency.
  5. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
  6. Serve:
    • Serve the Ulu Pancakes warm with coconut syrup, honey, or fresh fruit.

Ulu Pancakes are a tropical take on a breakfast favorite, offering a soft, fluffy texture with a hint of natural sweetness. These pancakes are a great way to enjoy the versatility of breadfruit while adding a delicious island flavor to your meal.
