Tex-Mex Tuna Salad Recipe

Ingredients:

  • 2 cans (5 oz each) tuna, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1 small red onion, finely chopped
  • 1/2 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper, to taste

Instructions:

  1. In a large mixing bowl, combine the drained tuna, black beans, corn, avocado, red onion, red bell pepper, cilantro, and jalapeño (if using).
