Dutch Croquetten

Instructions:

  1. Make the Ragout:
    • In a medium saucepan, melt the butter over medium heat. Stir in the flour to make a roux and cook for about 2 minutes until lightly golden. Gradually add the broth while whisking continuously to avoid lumps, cooking until the mixture thickens into a smooth sauce.
  2. Add the Beef:
    • Stir the shredded beef or veal into the sauce. Add the mustard, salt, black pepper, nutmeg, and parsley (if using). Cook for another 2-3 minutes until everything is well combined and heated through.
  3. Chill the Mixture:
    • Transfer the ragout to a shallow dish and refrigerate for at least 2 hours, or until firm enough to handle.
  4. Shape the Croquetten:
    • Once the mixture is firm, shape it into small, cylindrical rolls (about 3 inches long). Dip each roll into the beaten eggs, then roll in the breadcrumbs to coat.
  5. Fry the Croquetten:
    • Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C). Fry the croquetten in batches for 3-4 minutes, or until golden brown and crispy. Drain on paper towels.
