Savory French Crêpes

Ingredients:

For the Crêpes:

  • 1 cup all-purpose flour

  • 3 large eggs

  • 4 slices of ham
  • 4 large eggs

  • Mushrooms, sautéed (optional)
  • Fresh herbs (chives, parsley) for garnish

Instructions:

  1. Prepare the Crêpe Batter:
    • In a large bowl, whisk together the flour, salt, and black pepper (if using). In a separate bowl, beat the eggs, then add the milk, water, and melted butter. Gradually pour the wet ingredients into the dry ingredients, whisking until you have a smooth batter. Cover and let the batter rest for at least 30 minutes at room temperature.
  2. Cook the Crêpes:
    • Heat a non-stick skillet or crêpe pan over medium heat and lightly grease with butter. Pour about 1/4 cup of the batter into the pan, tilting it to spread the batter into a thin, even layer. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip the crêpe and cook for another 1 minute. Remove to a plate and keep warm. Repeat with the remaining batter.
  3. Prepare the Filling:
    • For each crêpe, sprinkle a little shredded cheese over the surface. Place a slice of ham in the center. If using, add sautéed spinach or mushrooms. Crack an egg on top of the filling, carefully spreading the white around to cook evenly.
  4. Fold and Cook the Filled Crêpes:
    • Fold the edges of the crêpe towards the center to form a square, leaving the egg yolk visible. Cover the skillet and cook for about 3-4 minutes until the egg white is set but the yolk is still runny. If you prefer the egg fully cooked, cover and cook for a longer time until the yolk is set to your liking.
  5. Serve:
    • Transfer the filled crêpes to serving plates. Garnish with fresh herbs like chives or parsley. Serve warm with a side salad or fresh fruit for a complete meal.
