Hot Antipasto Sandwiches

Ingredients:

  • 4 hoagie rolls or ciabatta buns
  • 1/4 cup olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Italian seasoning
  • 8 slices salami
  • 8 slices prosciutto
  • 8 slices capicola or ham
  • 1/2 cup marinated artichoke hearts, drained and chopped
  • 1/2 cup roasted red peppers, sliced
  • 1/4 cup black or green olives, sliced
  • 8 slices provolone or mozzarella cheese
  • Fresh basil leaves (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare the dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Set aside.
  3. Assemble the sandwiches: Slice the hoagie rolls or ciabatta buns in half lengthwise. Brush the cut sides of the bread with the prepared dressing. Layer the bottom half of each roll with salami, prosciutto, and capicola or ham. Top with chopped marinated artichoke hearts, roasted red peppers, and sliced olives.
  4. Add the cheese: Place two slices of provolone or mozzarella cheese on top of the sandwich fillings. Add fresh basil leaves, if desired.
  5. Toast the sandwiches: Place the assembled sandwiches on the prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and the bread is toasted.
