Chicken Koftas

Chicken Koftas are a delightful Middle Eastern dish, combining ground chicken with a medley of aromatic spices and herbs to create flavorful and tender meatballs. Ingredients:

  • 1 lb ground chicken
  • 1 small onion, finely grated
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground paprika
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt
  • 1/4 cup breadcrumbs
  • 1 egg, lightly beaten
  • 1 tbsp olive oil (for cooking)
  • Lemon wedges, for serving

Instructions:

  1. Prepare the mixture: In a large bowl, combine the ground chicken, grated onion, minced garlic, parsley, cilantro, cumin, coriander, paprika, cinnamon, nutmeg, black pepper, salt, breadcrumbs, and the beaten egg. Mix everything together until well combined.
  2. Shape the koftas: With damp hands, take small portions of the mixture and shape them into oval or cylindrical patties, about 2-3 inches in length. If you prefer, you can also form them into small round meatballs.
  3. Cook the koftas: Heat the olive oil in a large skillet over medium heat. Once hot, add the koftas to the skillet, making sure not to overcrowd them. Cook for about 4-5 minutes on each side, or until they are golden brown and cooked through.
