Packed with vitamins and fiber, they offer a slightly healthier alternative while still satisfying your chocolate cravings. Whether you’re looking for a guilt-free treat or simply want to try something new, these brownies are sure to become a favorite in your dessert repertoire.

Ingredients:

  • 1 cup mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1/2 cup almond butter (or any nut butter of your choice)
  • 1/4 cup pure maple syrup or honey
  • 1/4 cup cocoa powder
  • 1/4 cup oat flour (or any flour of your choice)
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips (optional)
  • 1/4 cup chopped nuts (optional)

Instructions:

  1. Prepare the Sweet Potatoes: Preheat your oven to 350°F (175°C). Peel and cube the sweet potatoes, then boil or steam them until they are soft. Once cooked, mash the sweet potatoes until smooth and let them cool.
  2. Mix the Wet Ingredients: In a large mixing bowl, combine the mashed sweet potatoes, almond butter, maple syrup (or honey), and vanilla extract. Stir until the mixture is smooth and well combined.
  3. Add the Dry Ingredients: Sift in the cocoa powder, oat flour, baking soda, and salt. Mix everything together until you have a smooth, thick batter.
  4. Add the Extras (Optional): If using, fold in the dark chocolate chips and chopped nuts.
  5. Bake the Brownies: Line an 8×8-inch baking pan with parchment paper or grease it lightly. Pour the brownie batter into the pan, spreading it out evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Let the brownies cool in the pan for at least 10 minutes before cutting them into squares. Enjoy warm or store them in an airtight container for up to a week.

These brownies are great on their own, but you can also top them with a sprinkle of powdered sugar or a drizzle of melted chocolate for an extra treat!
