Easy to make and irresistibly delicious, soft lemonade cookies are sure to become a family favorite, loved by both kids and adults alike.

Ingredients:

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup frozen lemonade concentrate, thawed
  • 1 tsp vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

For the Lemon Glaze:

  • 1 1/2 cups powdered sugar
  • 2-3 tbsp frozen lemonade concentrate, thawed
  • 1 tsp lemon zest (optional, for extra flavor)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make the Cookie Dough:
    • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Mix in the lemonade concentrate and vanilla extract until well combined.
    • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Shape and Bake the Cookies:
    • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each dough ball slightly with the back of a spoon or your fingertips.
    • Bake in the preheated oven for 8-10 minutes, or until the edges of the cookies are set and just beginning to turn golden. The centers should still be soft. Remove from the oven and let the cookies cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
  4. Prepare the Lemon Glaze:
    • In a small bowl, whisk together the powdered sugar, lemonade concentrate, and lemon zest (if using) until smooth. If the glaze is too thick, add a bit more lemonade concentrate; if it’s too thin, add more powdered sugar.
  5. Glaze the Cookies:
    • Once the cookies are completely cool, drizzle the lemon glaze over the tops using a spoon. Allow the glaze to set for a few minutes before serving.
  6. Serve and Store:
    • Arrange the soft lemonade cookies on a serving platter. Store any leftovers in an airtight container at room temperature for up to a week.

Soft lemonade cookies are a refreshing, citrusy treat that’s perfect for any occasion. Their light, zesty flavor and soft texture make them a hit at parties, bake sales, or simply as an afternoon snack with a cup of tea or lemonade.
