Kipplens

Kipplens are a classic and timeless cookie, known for their delicate, buttery texture and sweet, nutty flavor. Also referred to as snowball cookies, Russian tea cakes, or Mexican wedding cookies, these delightful treats are made with ground nuts, usually almonds or walnuts, and are generously rolled in powdered sugar. Their crumbly, melt-in-your-mouth texture makes them a favorite during the holiday season, but they are delicious enough to enjoy any time of the year. Kipplens are easy to make with just a few ingredients and add a touch of elegance to any cookie platter, making them perfect for family gatherings, special occasions, or as a simple afternoon treat with coffee or tea.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus more for rolling
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped almonds or walnuts
  • 1/4 tsp salt

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cream the Butter and Sugar:
    • In a large mixing bowl, use an electric mixer to cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy, about 2-3 minutes. Add the vanilla extract and mix until combined.
  3. Add Dry Ingredients:
    • Gradually add the flour and salt to the butter mixture, mixing on low speed until just combined. Stir in the finely chopped nuts until they are evenly distributed throughout the dough.
  4. Shape the Cookies:
    • Take about 1 tablespoon of dough at a time and roll it into small balls. Place the dough balls onto the prepared baking sheet, spacing them about 1 inch apart.
  5. Bake:
    • Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are set and just beginning to turn golden. The tops of the cookies should remain pale.
  6. Coat with Powdered Sugar:
    • Let the cookies cool on the baking sheet for a few minutes. While they are still warm, roll each cookie in powdered sugar until completely coated. Place the coated cookies on a wire rack to cool completely.
  7. Second Coating:
    • Once the cookies have cooled completely, roll them in powdered sugar again to give them a thicker, snowy coating.
  8. Serve and Store:
    • Arrange the kipplens on a serving platter and enjoy! Store any leftovers in an airtight container at room temperature for up to one week.

Kipplens are a simple yet elegant treat that brings a touch of sweetness and nostalgia to any occasion. Their classic flavor and beautiful appearance make them a cherished addition to holiday celebrations and everyday snacking alike.
