Peach Bavarian

Ingredients:

  • 4 ripe peaches, peeled and pitted
  • 1/2 cup granulated sugar

  • 1 envelope unflavored gelatin (about 2 1/4 teaspoons)
  • 1/4 cup cold water
  • 3 large egg yolks
  • 1/2 cup milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions:

  1. In a blender or food processor, puree the peeled and pitted peaches until smooth. Stir in the lemon juice and set aside.
  2. In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to soften.
  3. In a medium saucepan, whisk together the egg yolks, sugar, and milk. Cook over medium heat, stirring constantly, until the mixture thickens slightly, about 5-7 minutes. Do not let it boil.
  4. Remove the saucepan from the heat and stir in the softened gelatin until completely dissolved.
  5. Stir the peach puree into the custard mixture until well combined. Let the mixture cool to room temperature.
  6. In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
  7. Gently fold the whipped cream into the cooled peach mixture until fully incorporated.
  8. Pour the mixture into a lightly greased mold or individual serving dishes. Cover and refrigerate for at least 4 hours, or until set.
  9. To serve, unmold the Peach Bavarian by running a knife around the edges and inverting it onto a serving plate. If using individual dishes, serve directly from them.
