Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs (optional)
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup cooked sausage, crumbled (use breakfast sausage or Italian sausage)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup chopped bell pepper (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the muffin cups.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, salt, black pepper, garlic powder, onion powder, and dried Italian herbs, if using.
  3. Combine Wet Ingredients: In a separate medium bowl, whisk together the milk, vegetable oil, and eggs until well combined.
  4. Add Wet to Dry: Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined, being careful not to overmix.
  5. Add Sausage and Veggies: Fold in the cooked sausage, shredded cheddar cheese, chopped green onions, and chopped bell pepper (if using). Mix until everything is evenly distributed.
  6. Fill Muffin Cups: Spoon the batter evenly into the prepared muffin cups, filling each about 3/4 full.
  7. Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.
  8. Cool: Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.

Enjoy these Sausage Muffins warm or at room temperature. They’re perfect for breakfast, brunch, or as a savory snack any time of the day!
