Roasted Garlic Tirokafteri

Tirokafteri is a traditional Greek spicy feta dip that adds a delightful kick to any meal or appetizer spread. This version elevates the classic recipe by incorporating the rich, caramelized flavors of roasted garlic, creating a harmonious balance of heat and depth. The creamy texture of feta combined with the subtle sweetness of roasted garlic and a hint of spicy red peppers makes this dip incredibly versatile—perfect for serving with pita bread, vegetables, or as a spread on sandwiches.

Ingredients:

  • 1 whole head of garlic
  • 1 tablespoon olive oil
  • 8 ounces feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 2 tablespoons olive oil (extra for blending)
  • 1 tablespoon red wine vinegar
  • 1-2 roasted red peppers, chopped (adjust based on heat preference)
  • 1 teaspoon crushed red pepper flakes (optional for extra heat)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with 1 tablespoon of olive oil, wrap it in foil, and roast for 30-35 minutes, or until the garlic is soft and golden. Let it cool.
  2. Prepare the Dip: In a food processor, combine the crumbled feta, Greek yogurt, roasted red peppers, and the roasted garlic cloves (squeeze them out of their skins). Blend until smooth.
  3. Add Flavorings: Add the 2 tablespoons of olive oil, red wine vinegar, and crushed red pepper flakes to the mixture. Blend again until fully incorporated. Taste and season with salt and black pepper as needed.
  4. Serve: Transfer the Tirokafteri to a serving dish, drizzle with a little extra olive oil, and garnish with chopped fresh parsley. Serve immediately with pita bread, crackers, or fresh vegetables.

This dip can be stored in the refrigerator for up to a week, allowing the flavors to meld even further over time.
