Ingredients:
- 1 whole head of garlic
- 1 tablespoon olive oil
- 8 ounces feta cheese, crumbled
- 1/4 cup Greek yogurt
- 2 tablespoons olive oil (extra for blending)
- 1 tablespoon red wine vinegar
- 1-2 roasted red peppers, chopped (adjust based on heat preference)
- 1 teaspoon crushed red pepper flakes (optional for extra heat)
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with 1 tablespoon of olive oil, wrap it in foil, and roast for 30-35 minutes, or until the garlic is soft and golden. Let it cool.
