Bologna Cake

Bologna Cake is a quirky and savory retro appetizer that’s sure to be a conversation starter at any gathering. This Southern classic, often seen at potlucks and parties, is essentially a layered “cake” made from bologna and cream cheese. It’s easy to prepare, with a striking appearance that makes it a fun and unique centerpiece. The combination of the creamy, tangy frosting with the salty, meaty layers of bologna creates a surprisingly tasty treat. While it might sound unusual, this dish is a playful nod to classic Americana cuisine and is sure to evoke a sense of nostalgia.

Ingredients:

  • 1 pound of bologna, sliced
  • 2 (8-ounce) packages of cream cheese, softened
  • 1/4 cup of mayonnaise
  • 1 tablespoon of Dijon mustard
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of onion powder
  • Crackers, for serving
  • Garnishes like olives, cherry tomatoes, or parsley (optional)

Instructions:

  1. Prepare the Cream Cheese Frosting: In a medium-sized mixing bowl, combine the softened cream cheese, mayonnaise, Dijon mustard, garlic powder, and onion powder. Mix until smooth and creamy.
  2. Layer the Bologna: On a serving platter, place a slice of bologna. Spread a thin layer of the cream cheese mixture evenly over the slice. Repeat the process, layering slices of bologna and spreading the cream cheese mixture between each layer until all the bologna slices have been used.
  3. Frost the Cake: Once all the bologna slices are layered, use the remaining cream cheese mixture to “frost” the outside of the entire cake, covering it completely.
  4. Chill the Cake: Cover the cake with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the cake to firm up.
  5. Garnish and Serve: Before serving, garnish the top of the bologna cake with olives, cherry tomatoes, or parsley, if desired. Serve with an assortment of crackers.

Enjoy this nostalgic and whimsical dish that’s sure to surprise and delight your guests!
