CAJUN RICE DISH

  • 3 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1/2 cup chopped green onions (for garnish)
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Sauté the sausage: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5 minutes. Remove the sausage from the skillet and set it aside.
  2. Cook the vegetables: In the same skillet, add the chopped onion, bell peppers, and celery. Sauté for 5-7 minutes until the vegetables are softened. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Add the seasonings: Stir in the Cajun seasoning, smoked paprika, and cayenne pepper (if using). Cook for 1 minute to allow the spices to bloom and coat the vegetables.
