Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

For the Artichoke Hearts:

  • 1 can (14 oz) artichoke hearts, drained and halved
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Juice of 1 lemon
  • 1/4 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a shallow dish, combine the Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  3. Coat each chicken breast with flour, dip into the beaten egg, and then coat with the Parmesan breadcrumb mixture.
  4. Heat 2 tbsp olive oil in an ovenproof skillet over medium heat. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
  5. Transfer the skillet to the preheated oven and bake the chicken for 20-25 minutes until fully cooked.
  6. While the chicken bakes, heat 1 tbsp olive oil in another skillet over medium heat. Add the minced garlic and sauté for 1 minute.
  7. Stir in the artichoke hearts, lemon juice, and chicken broth. Simmer for 5-7 minutes until the artichoke hearts are heated through.
  8. Season the artichokes with salt and pepper, and spoon them over the baked Parmesan chicken.
  9. Garnish with fresh parsley, if desired, and serve hot.
