Ingredients:

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup sliced fresh or frozen okra
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp cayenne pepper (optional, for heat)
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked rice or cornbread, for serving

Instructions:

  1. Sauté the Vegetables:
    • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and diced bell pepper, and sauté for 5-7 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  2. Add the Tomatoes and Broth:
    • Stir in the diced tomatoes (with their juice) and vegetable broth. Bring the mixture to a simmer.
  3. Add the Okra and Beans:
    • Add the sliced okra, kidney beans, and black-eyed peas to the pot. Stir in the smoked paprika, dried thyme, cayenne pepper (if using), and bay leaf. Season with salt and pepper to taste.
  4. Simmer the Stew:
    • Reduce the heat to low, cover, and let the stew simmer for 25-30 minutes, stirring occasionally, until the okra is tender and the flavors have melded together. If the stew becomes too thick, you can add a bit more broth or water to reach your desired consistency.
  5. Serve:
    • Remove the bay leaf before serving. Ladle the Southern Okra Bean Stew into bowls and garnish with chopped fresh parsley. Serve hot with cooked rice or a side of cornbread.

Southern Okra Bean Stew is a warm and nourishing dish that embodies the flavors of Southern cooking. With its hearty ingredients and rich, savory broth, this stew is perfect for a cozy dinner, bringing a taste of the South to your table.
