Zucchini Egg Bake is a light and nutritious dish that’s perfect for breakfast, brunch, or even a simple dinner. This recipe combines fresh zucchini with eggs, cheese, and a blend of herbs to create a flavorful and satisfying bake that’s both low in carbs and packed with protein. The zucchini adds moisture and a subtle sweetness, while the eggs and cheese create a creamy, custard-like texture that’s wonderfully comforting. Easy to prepare and versatile, this Zucchini Egg Bake can be enjoyed on its own or paired with a fresh salad, making it a great option for any time of day.

Ingredients:

  • 2 medium zucchinis, thinly sliced or grated
  • 6 large eggs
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1/2 cup milk (or cream)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh herbs for garnish (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or a similar-sized casserole dish.
  2. Prepare the Zucchini:
    • If grating the zucchini, place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. If slicing, pat the zucchini slices dry with paper towels. This step helps prevent the bake from becoming watery.
  3. Cook the Onions and Garlic:
    • In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant. Remove from heat and let cool slightly.
  4. Prepare the Egg Mixture:
    • In a large mixing bowl, whisk together the eggs, milk, oregano, thyme, salt, and pepper. Stir in the sautéed onions and garlic, shredded cheese, and prepared zucchini until well combined.
  5. Assemble the Bake:
    • Pour the zucchini and egg mixture into the greased baking dish, spreading it out evenly.
  6. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the egg mixture is set and the top is lightly golden brown. A knife inserted into the center should come out clean.
  7. Serve:
    • Allow the Zucchini Egg Bake to cool slightly before slicing. Garnish with fresh herbs if desired, and serve warm.

Zucchini Egg Bake is a delicious and healthy dish that’s easy to prepare and versatile enough to enjoy any time of the day. With its light, creamy texture and rich flavor, it’s a perfect way to use up extra zucchini and enjoy a protein-packed meal.
