Pan-Seared Cod

Pan-seared cod is a simple yet elegant dish that brings out the delicate flavors of fresh cod fillets. The searing process gives the fish a beautiful golden-brown crust while keeping the inside tender and flaky. This recipe is perfect for a quick weeknight dinner but also impressive enough to serve on special occasions. The combination of lemon, garlic, and fresh herbs enhances the natural taste of the cod, making it a light and healthy meal option that’s both satisfying and delicious.

Ingredients:

  • 4 cod fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon (zested and juiced)
  • 2 garlic cloves, minced
  • 2 tablespoons unsalted butter
  • Fresh parsley or dill, chopped, for garnish

Instructions:

  1. Prepare the Cod Fillets: Pat the cod fillets dry with paper towels to remove any excess moisture. Season both sides with salt and pepper.
  2. Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Ensure the pan is hot before adding the fish to achieve a good sear.
  3. Sear the Cod: Place the cod fillets in the hot skillet, skin-side down if the skin is still on. Cook for 3-4 minutes on the first side without moving the fillets, until they are golden brown and can be easily lifted from the pan.
  4. Flip and Add Flavor: Flip the fillets carefully using a spatula. Add the minced garlic and butter to the pan. Cook for an additional 2-3 minutes, occasionally spooning the melted butter and garlic over the fillets.
  5. Add Lemon: Pour the lemon juice over the fish during the last minute of cooking, then sprinkle with lemon zest.
  6. Garnish and Serve: Remove the cod from the skillet and place it on serving plates. Garnish with chopped fresh parsley or dill. Serve immediately with your choice of sides, such as steamed vegetables, rice, or a fresh salad.

Enjoy your pan-seared cod with a squeeze of extra lemon juice if desired!
