The strawberries caramelize in the oven, creating a beautiful, flavorful topping that enhances the natural richness of the fish. This dish is as beautiful as it is delicious, making it perfect for a special dinner or a healthy weeknight meal. Serve it with a fresh salad or roasted vegetables for a stunning and nutritious dinner.

Ingredients:

  • 4 salmon fillets (about 6 oz each)
  • 1 cup fresh strawberries, hulled and chopped
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped, for garnish

Instructions:

  1. Prepare the Strawberry Marinade:
    • In a medium bowl, combine the chopped strawberries, balsamic vinegar, honey, olive oil, minced garlic, thyme, salt, and pepper. Mix well to create a marinade.
  2. Marinate the Salmon:
    • Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the strawberry marinade over the salmon, ensuring each fillet is well coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more intense flavor.
  3. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  4. Bake the Salmon:
    • Remove the salmon from the marinade and place the fillets on the prepared baking sheet, skin-side down. Spoon some of the strawberry mixture over the top of each fillet.
    • Bake in the preheated oven for 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork. The strawberries should be slightly caramelized.
  5. Serve:
    • Remove the salmon from the oven and let it rest for a minute. Garnish with chopped fresh basil or parsley and serve immediately.

Baked Strawberry Salmon is a unique and flavorful dish that pairs the richness of salmon with the fresh sweetness of strawberries. The result is a beautifully balanced meal that’s both elegant and easy to prepare, perfect for impressing your guests or treating yourself to something special.
