Ingredients:

For the Dough:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

For the Raisin Filling:

  • 1 1/2 cups raisins
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 tablespoon water (for mixing with cornstarch)

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms. Divide the dough into two portions, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. Make the Raisin Filling:
    • In a small saucepan, combine the raisins, sugar, water, lemon juice, and cinnamon. Bring to a simmer over medium heat, stirring occasionally. Cook for about 10 minutes, until the raisins are plump and the mixture is thickened.
    • In a small bowl, mix the cornstarch with 1 tablespoon of water to create a slurry. Stir the slurry into the raisin mixture and cook for an additional 2 minutes, until the filling is thick and glossy. Remove from heat and let cool.
  3. Assemble the Cookies:
    • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
    • On a lightly floured surface, roll out one portion of dough to about 1/8 inch thickness. Use a round cookie cutter to cut out circles of dough. Place half of the circles on the prepared baking sheets.
    • Spoon a small amount of the raisin filling onto the center of each dough circle on the baking sheet. Top with another dough circle, pressing the edges to seal. Use a fork to crimp the edges if desired.
  4. Bake the Cookies:
    • Bake in the preheated oven for 12-15 minutes, or until the cookies are lightly golden around the edges. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  5. Serve:
    • Once cooled, enjoy your Raisin-Filled Cookies with a cup of tea or coffee, or pack them up for a delicious homemade gift.

Raisin-Filled Cookies are a classic, comforting treat that brings a taste of home with every bite. The combination of soft, buttery dough and sweet, spiced raisin filling makes these cookies a timeless favorite that’s perfect for sharing with loved ones.
