Taco Twist Bake

Taco Twist Bake is a delightful fusion of classic taco flavors and a hearty pasta bake. This dish combines seasoned ground beef, vibrant salsa, and gooey melted cheese with twisted pasta, creating a comforting and flavorful meal that’s perfect for family dinners or casual get-togethers. The combination of taco seasoning and pasta is a surprising yet delicious twist on traditional taco night, making it a crowd-pleaser that will have everyone coming back for seconds.

Ingredients:

  • 8 oz. rotini pasta (or any twisted pasta)
  • 1 lb. ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning mix
  • 1 can (15 oz.) black beans, drained and rinsed
  • 1 can (10 oz.) diced tomatoes with green chilies, undrained
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives (optional)
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  2. Cook the pasta according to the package directions until al dente. Drain and set aside.
  3. In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
  4. Add the taco seasoning mix to the beef and onion mixture, stirring well to combine.
  5. Stir in the black beans, diced tomatoes with green chilies, and salsa. Cook for 2-3 minutes until heated through.
  6. Remove the skillet from heat and stir in the cooked pasta and sour cream until well mixed.
  7. Pour the mixture into the prepared baking dish. Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the top.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for a few minutes. Garnish with sliced black olives and fresh cilantro if desired.
