  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups peeled and diced fresh peaches

For the Praline Topping:

  • 1/2 cup chopped pecans
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, melted
  • 1/4 teaspoon ground cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease the muffin cups.
  2. Prepare the muffin batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon. In a separate bowl, combine the melted butter, buttermilk, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced peaches.
  3. Fill the muffin cups: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  4. Make the praline topping: In a small bowl, mix together the chopped pecans, brown sugar, melted butter, and cinnamon until well combined.
  5. Top the muffins: Spoon the praline mixture evenly over the top of each muffin, pressing it lightly into the batter.
  6. Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Cool and serve: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
