Shrimp Quesadillas

Shrimp quesadillas are a delightful twist on a classic dish, combining the rich flavors of sautéed shrimp with gooey melted cheese, all wrapped in a crispy tortilla. This dish is perfect for a quick weeknight meal or as a crowd-pleasing appetizer. The shrimp are seasoned with a blend of spices that bring out their natural sweetness, while the cheese adds a creamy texture that perfectly complements the crunch of the tortillas. Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1/4 cup chopped fresh cilantro
  • Optional: sour cream, salsa, guacamole for serving

Instructions:

  1. Prepare the Shrimp:
    • In a medium bowl, combine the shrimp, olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Toss until the shrimp are evenly coated with the seasoning.
  2. Cook the Shrimp:
    • Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Assemble the Quesadillas:
    • Wipe out the skillet and reduce the heat to medium. Place one tortilla in the skillet and sprinkle a generous amount of Monterey Jack and cheddar cheese on half of the tortilla.
    • Add a portion of the cooked shrimp and some chopped cilantro on top of the cheese. Fold the tortilla over to cover the filling.
  4. Cook the Quesadillas:
    • Cook the quesadilla for 2-3 minutes on each side until the tortilla is golden brown and crispy, and the cheese is melted. Repeat with the remaining tortillas and shrimp.
  5. Serve:
    • Cut the quesadillas into wedges and serve immediately with your choice of sour cream, salsa, or guacamole on the side.
