South Sea Salad

This vibrant and refreshing South Sea Salad is inspired by the tropical flavors of the Pacific Islands. Ingredients:

  • 1 pound shrimp, cooked and peeled
  • 2 cups mixed greens (such as romaine, spinach, and arugula)
  • 1 cup pineapple chunks
  • 1 cup mango, diced
  • 1 cup cucumber, sliced
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup macadamia nuts, chopped
  • 1/4 cup fresh cilantro, chopped

Dressing:

  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger, grated
