Teriyaki Chicken Salad

Ingredients:

For the chicken:

  • 2 boneless, skinless chicken breasts

  • 2 tbsp honey
  • 2 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 1 garlic clove, minced
  • 1 tsp fresh ginger, grated

For the salad:

  • 4 cups mixed salad greens (spinach, arugula, romaine)
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro leaves, chopped
  • 2 tbsp sesame seeds
  • 1/4 cup sliced almonds (optional)

For the dressing:

  • 1/4 cup soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tsp fresh ginger, grated
  • Juice of 1 lime

Instructions:

  1. Marinate the chicken: In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Place the chicken breasts in a resealable plastic bag or shallow dish, pour the marinade over them, and let it marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
