Ingredients

  • 2 cups cooked quinoa (cooled)
  • 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 1/4 cup chopped green onions or parsley
  • 1/2 cup grated zucchini or carrot (optional for added veggies)
  • 1 clove garlic, minced
  • 1 tsp cumin (or your favorite seasoning)
  • Salt and pepper to taste
  • 2-3 tbsp olive oil (for frying)

Instructions

  1. Prepare the mixture: In a large bowl, combine the cooked quinoa, breadcrumbs, Parmesan cheese, beaten eggs, green onions or parsley, grated zucchini or carrot (if using), garlic, cumin, salt, and pepper. Mix well until all ingredients are evenly combined.
  2. Shape the cakes: Scoop out about 1/4 cup of the mixture and shape it into small patties or cakes, pressing firmly so they hold together. Repeat with the remaining mixture.
  3. Cook the quinoa cakes: Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the quinoa cakes to the pan and cook for 3-4 minutes per side, or until golden brown and crispy.
  4. Serve: Remove the quinoa cakes from the skillet and drain on a paper towel-lined plate. Serve warm with your favorite dipping sauce, a dollop of yogurt, or as part of a salad or meal.

These Quinoa Cakes are a healthy and delicious option that’s perfect for any time of day, offering a crispy texture and savory flavor that’s sure to satisfy!
