One-pot Greek Chicken Risoni

One-Pot Greek Chicken Risoni is a flavorful, Mediterranean-inspired dish that combines tender, juicy chicken with risoni (orzo) pasta in a savory tomato broth. Packed with garlic, herbs, and a hint of lemon, this comforting meal is cooked entirely in one pot, making it an easy and fuss-free weeknight dinner. The addition of olives and feta cheese brings a tangy, briny contrast to the rich flavors, making every bite a burst of Greek goodness. Serve it with a side of crusty bread or a fresh salad for a complete meal.

Ingredients:

  • 4 boneless, skinless chicken thighs (or breasts)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cumin
  • 1 1/2 cups risoni (orzo) pasta
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1/4 cup pitted Kalamata olives, halved
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese
  • Fresh parsley or dill, for garnish (optional)

Instructions:

  1. Season the chicken: Rub the chicken thighs with salt, pepper, oregano, thyme, and cumin.
  2. Heat the olive oil in a large, deep skillet or pot over medium-high heat. Sear the chicken on both sides until golden brown, about 4-5 minutes per side. Remove the chicken from the pan and set aside.
  3. Cook the onions and garlic: In the same pan, add the diced onions and cook for 3-4 minutes until softened. Add the garlic and cook for another 1 minute until fragrant.
  4. Add the risoni (orzo): Stir in the risoni, toasting it slightly for about 2 minutes. Then, pour in the diced tomatoes and chicken broth, stirring to combine.
  5. Return the chicken to the pot: Nestle the seared chicken into the risoni mixture. Bring the mixture to a simmer, cover, and cook for 12-15 minutes, or until the risoni is tender and the chicken is cooked through.
  6. Stir in the olives and lemon juice: Once cooked, stir in the Kalamata olives and a squeeze of fresh lemon juice for brightness. Taste and adjust seasoning with salt and pepper if needed.
  7. Garnish with feta and herbs: Sprinkle the dish with crumbled feta cheese and garnish with fresh parsley or dill before serving.

This one-pot meal is both flavorful and convenient, offering a perfect balance of savory chicken, tender pasta, and bright Mediterranean accents in every bite.
