Topped with a simple glaze or a dusting of powdered sugar, this cake is both elegant and comforting, offering a taste of holiday cheer in every bite.

Ingredients:

  • For the Cake:
    • 1 ½ cups red wine
    • 2 cups all-purpose flour
    • 1 ½ teaspoons baking powder
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 1 teaspoon ground cinnamon
    • ½ teaspoon ground nutmeg
    • ¼ teaspoon ground cloves
    • 1 cup unsalted butter, softened
    • 1 ½ cups granulated sugar
    • 3 large eggs
    • 1 teaspoon vanilla extract
    • Zest of 1 orange
  • For the Glaze:
    • 1 cup powdered sugar
    • 2-3 tablespoons mulled wine (reserved from the cake preparation)

Instructions:

  1. Prepare the Mulled Wine:
In a small saucepan, combine the red wine, cinnamon, nutmeg, and cloves. Bring the mixture to a simmer over medium heat, then reduce the heat and let it simmer gently for about 10 minutes. Remove from heat and let cool. Reserve 2-3 tablespoons for the glaze.
  2. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch bundt pan or a round cake pan.
  3. Mix the Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Cream the Butter and Sugar:
In a large bowl, beat the softened butter and sugar together until light and fluffy. This should take about 3-4 minutes.
  5. Add Eggs and Flavorings:
Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract and orange zest.
  6. Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the butter mixture, alternating with the mulled wine, beginning and ending with the flour mixture. Mix until just combined.
  7. Bake the Cake:
Pour the batter into the prepared pan, smoothing the top with a spatula. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the Cake:
Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  9. Prepare the Glaze:
In a small bowl, whisk together the powdered sugar and reserved mulled wine until smooth. Drizzle the glaze over the cooled cake.
  10. Serve and Enjoy:
Slice the cake and enjoy the warm, spiced flavors with a cup of coffee or tea. This cake pairs beautifully with a glass of the same red wine used in the recipe.
