Mocha Mousse

Ingredients:

  • 6 oz dark chocolate, chopped
  • 1 tablespoon instant espresso powder
  • 2 tablespoons hot water
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Optional: whipped cream and chocolate shavings for garnish

Instructions:

  1. In a small bowl, dissolve the espresso powder in the hot water and set aside.
  2. Melt the dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method), stirring occasionally until smooth. Remove from heat and allow to cool slightly.
  3. In a separate bowl, whisk the egg yolks with the sugar until pale and thick. Stir in the dissolved espresso and melted chocolate until well combined.
  4. In a clean bowl, whip the heavy cream with vanilla extract until soft peaks form.
  5. Gently fold the whipped cream into the chocolate mixture until fully incorporated.
  6. In another bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture in two additions, being careful not to deflate the mixture.
  7. Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours or until set.
  8. Before serving, top with whipped cream and chocolate shavings if desired.
