Ingredients:
- 6 oz dark chocolate, chopped
- 1 tablespoon instant espresso powder
- 2 tablespoons hot water
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Optional: whipped cream and chocolate shavings for garnish
Instructions:
- In a small bowl, dissolve the espresso powder in the hot water and set aside.
- Melt the dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method), stirring occasionally until smooth. Remove from heat and allow to cool slightly.
- In a separate bowl, whisk the egg yolks with the sugar until pale and thick. Stir in the dissolved espresso and melted chocolate until well combined.
- In a clean bowl, whip the heavy cream with vanilla extract until soft peaks form.
- Gently fold the whipped cream into the chocolate mixture until fully incorporated.
- In another bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture in two additions, being careful not to deflate the mixture.
- Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours or until set.
- Before serving, top with whipped cream and chocolate shavings if desired.
