Colorado Green Chili is a flavorful and hearty dish that highlights the smoky heat of roasted green chiles, particularly the famous Hatch chiles. This chili is often made with tender pork and a rich, slightly spicy sauce, making it a comforting choice for cooler weather or a satisfying meal any time of the year. Whether served on its own, over burritos, or alongside warm tortillas, this chili brings the vibrant flavors of the Southwest to your table. It’s perfect for those who enjoy a bit of spice in their comfort food.
Ingredients:
- 2 lbs pork shoulder or pork loin, diced
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 cups roasted green chiles, chopped (Hatch chiles preferred)
- 1 can (14 oz) diced tomatoes with green chiles
- 4 cups chicken broth
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons flour (optional, for thickening)
- Fresh cilantro, for garnish
- Warm tortillas or rice, for serving
Instructions:
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced pork and brown on all sides, about 5-7 minutes.
- Remove the pork from the pot and set aside. In the same pot, sauté the onions until softened, about 5 minutes. Add garlic and cook for another minute.
- Stir in the chopped green chiles, diced tomatoes, cumin, oregano, paprika, and a pinch of salt and pepper. Return the pork to the pot and stir everything together.
- Pour in the chicken broth, bring to a boil, then reduce heat to low. Let it simmer uncovered for 1 to 1.5 hours, until the pork is tender and the flavors meld together.
- If you prefer a thicker chili, mix the flour with a small amount of water to form a slurry and stir it into the pot during the last 15 minutes of cooking.
- Taste and adjust seasoning as needed. Serve hot, garnished with fresh cilantro, alongside tortillas or over rice.
This Colorado Green Chili brings a touch of the Southwest to your kitchen with its bold flavors and comforting warmth. Enjoy!
