CHICKEN AND LEEK PIE

  • 1 1/2 cups chicken broth

  • 1 sheet puff pastry or pie dough (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C).
  2. Cook the leeks: In a large skillet, melt the butter and olive oil over medium heat. Add the sliced leeks and sauté for 5-7 minutes, or until softened. Add the minced garlic and cook for another minute.
  3. Make the filling: Stir in the flour and cook for 1-2 minutes to remove the raw flour taste. Gradually add the chicken broth, stirring constantly, until the sauce thickens. Stir in the heavy cream and thyme, then add the cooked chicken. Season with salt and pepper. Remove from heat and let the mixture cool slightly.
  4. Assemble the pie: Roll out the puff pastry or pie dough and line the bottom of a pie dish with half of the dough, trimming the excess. Pour the chicken and leek filling into the pie dish. Cover with the remaining dough, sealing the edges and cutting slits on top for steam to escape. Brush the top with beaten egg.
  5. Bake the pie: Bake for 25-30 minutes, or until the pastry is golden brown and crisp.
