Caldo Gallego

Caldo Gallego is a traditional Galician soup that embodies the hearty flavors of northern Spain. Originating from the verdant region of Galicia, this comforting dish is a staple of Galician cuisine, especially during the colder months. The soup is characterized by its rich broth made from ham hock, chorizo, and pancetta, which infuses the dish with a deep, smoky flavor. Potatoes and white beans add substance, while the addition of leafy greens like kale or turnip greens provides a fresh contrast. Ingredients:

  • 1 ham hock or bone
  • 4 oz chorizo, sliced
  • 4 oz pancetta, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 2 cups cooked white beans (cannellini or navy beans)
  • 6 cups chicken or vegetable broth
  • 2 cups kale or turnip greens, chopped
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions:

  1. Prepare the base: In a large pot, heat a small amount of olive oil over medium heat. Add the diced pancetta and cook until it begins to render its fat and turns slightly crispy. Add the chopped onion and garlic, and sauté until the onion is translucent and fragrant.
  2. Simmer the broth: Add the ham hock to the pot, followed by the chicken or vegetable broth. Bring to a boil, then reduce the heat to low and let it simmer for about 30 minutes to infuse the broth with flavor.
  3. Cook the potatoes and beans: Add the diced potatoes and cooked white beans to the pot. Continue to simmer until the potatoes are tender, about 20 minutes.
  4. Add the chorizo and greens: Stir in the sliced chorizo and chopped kale or turnip greens. Cook for an additional 10-15 minutes, until the greens are wilted and the chorizo is heated through.
  5. Season and serve: Remove the ham hock from the pot, shred any remaining meat from the bone, and return the meat to the soup. Season with salt and pepper to taste. Serve hot with crusty bread on the side.
