Ingredients:

  • 1 pound beef tenderloin, cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • Fresh rosemary or thyme sprigs (optional, for garnish)
  • Wooden skewers or cocktail sticks

For the Glaze or Dipping Sauce:

Option 1: Balsamic Glaze

  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey or brown sugar

Option 2: Garlic Herb Butter Sauce

  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon Dijon mustard (optional)

Instructions:

  1. Prepare the Beef:
    • Pat the beef tenderloin cubes dry with paper towels and season them generously with salt and freshly ground black pepper.
    • If using wooden skewers, soak them in water for about 15 minutes to prevent burning. Skewer each beef cube onto a skewer or cocktail stick.
  2. Sear the Beef:
    • Heat the olive oil and butter in a large skillet over medium-high heat. Once the butter is melted and the skillet is hot, add the beef skewers in batches, making sure not to overcrowd the pan.
    • Sear the beef for 1-2 minutes on each side, or until browned and cooked to your desired level of doneness (medium-rare is recommended for tenderloin). Remove the skewers from the pan and set them aside on a plate.
  3. Prepare the Glaze or Dipping Sauce:

    For Balsamic Glaze:

    • In a small saucepan, combine the balsamic vinegar and honey or brown sugar. Bring to a simmer over medium heat and cook until the mixture has reduced by half and is thickened to a syrupy consistency, about 5-7 minutes. Drizzle the glaze over the seared beef lollipops.

    For Garlic Herb Butter Sauce:

    • In the same skillet used for searing the beef, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Stir in the chopped parsley, thyme, and Dijon mustard (if using). Drizzle the garlic herb butter over the seared beef lollipops or serve as a dipping sauce on the side.
  4. Garnish and Serve:
    • Arrange the beef lollipops on a serving platter. If desired, garnish with fresh rosemary or thyme sprigs for an elegant presentation.
    • Serve immediately with the glaze or sauce drizzled over the top or on the side for dipping.

Enjoy these Beef Tenderloin Lollipops as a luxurious and flavorful appetizer that’s sure to impress your guests!
