Potato Quesadillas

Ingredients:

  • 2 large potatoes, peeled and diced
  • 2 tablespoons butter

  • 8 flour tortillas

Instructions:

  1. Prepare the Mashed Potatoes:
    • Place the diced potatoes in a pot of salted water and bring to a boil. Cook until the potatoes are tender, about 10-12 minutes. Drain and return the potatoes to the pot.
    • Add the butter and milk to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
  2. Sauté the Onions:
    • In a skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until softened and translucent.

  3. Assemble the Quesadillas:
    • Heat a large skillet or griddle over medium heat. Place one tortilla on the skillet and spread a generous layer of the mashed potato mixture over half of the tortilla. Sprinkle a portion of the shredded cheese over the potatoes.
    • Fold the tortilla in half to cover the filling. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
  4. Serve:
    • Cut the quesadillas into wedges and garnish with chopped fresh cilantro. Serve with sour cream and salsa on the side.
