Ingredients

  • 1 teaspoon cumin
  • 1 teaspoon paprika

  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 4 cups beef broth
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños

Instructions

  1. Cook the Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Remove the beef from the pot and set aside.
  2. Sauté the Vegetables: In the same pot, add the chopped onion, garlic, green bell pepper, and red bell pepper. Sauté until the vegetables are soft, about 5 minutes.
  3. Add Spices: Stir in the chili powder, cumin, paprika, cayenne pepper (if using), salt, and pepper. Cook for 1 minute until the spices are fragrant.
  4. Combine Ingredients: Add the cooked beef back into the pot. Stir in the diced tomatoes, kidney beans, black beans, beef broth, corn, tomato paste, and Worcestershire sauce. Mix well.
